Banana Nut Bread Recipe

Banana Nut Bread Recipe

2 cups sugar
1 1/2 cups salad oil
3 eggs
4 bananas
3 cups flour
1 teaspoon cinnamon
1 taspoon nutmeg
1/2 teaspoon salt
2 teaspoons baking soda
1 cup pecans (chopped)

Preheat Oven to 350 Degrees.

Mix sugar and salad oil until well blended.
Add eggs one at a time, beating between each addition.
Break up bananas in chunks and add to batter.
Sift flour, measure, add cinnamon, nutmeg, salt, soda and sift again. Add slowly to the batter and continue beating.
Fold in pecans.
Grease and flour two loaf pans 9 1/4 x 5 1/4 x 2 3/4 inches or a bundt pan.

Bake for 1 hour at 350 degrees.
Let cool for 30 minutes before removing from pan.
Frost bread when cold. This bread may be frozen before frosting.

Frosting (optional):

1 stick butter, softened
1 (8-ounce) package of cream cheese, softened
1 box powdered sugar
1 teaspoon vanilla

Cream together butter and cream cheese.
Add powdered sugar and vanilla and continue beating until of spreading consistency. - Banana Nut Bread recipe.

The Froggy Bottom Louisiana Cuisine cajun cookbook is a masterful collection of over 400 authentic cajun and creole recipes that is sure to spice up your kitchen. Whether you're an experienced gourmet chef, or first time novice, these easy-to-prepare recipes will add zest to any meal.

Because of its diverse cultures, Louisiana offers the world a unique cuisine. The authors of this wonderful cookbook, Faye Brydels and Donna Jenkins, both live in south Louisiana, after moving from their childhood homes in north Louisiana.
